Vegetarian Vietnamese in Tampa!



Come to Trang Viet every 2nd Saturday for a vegetarian buffet from 5-7pm. Held by Tampa's Vegetarian/ Vegan Group, but open to everyone. Only $14.00 which includes dinner, soup, dessert, drink and....tip!

What Food You Won't Find Here


I just wanted to briefly tell you about the kind of recipes you'll find posted here. Like every chef, I'm influenced by the foods I love and the foods I can't have. Here's a list of ingredients that won't usually be featured.
  • Banana
  • Corn
  • Walnut
  • Pecan
  • Eggs
  • All meat; except seafood
  • Bread products; except organic sprouted breads
  • Dairy products; lactose intolerant

Since I'm still a little semi-vegetarian I will include "limited" meat recipes. If a recipe would be good with some, I'll list what kind in the "Note" section. Meats I use are:

  • Fish
  • Squid
  • Octopus
  • Mussels
  • Shrimp

Finally, I'm in the middle of creating RAW recipes & Diabetic friendly recipes. I'm preparing a book for my father and it needs to be done by August 2010. If the recipes turn out as planned, there may be an e-book coming out for everyone to try out. Please feel free to comment on the recipes I post on here so I know what everyone is enjoying.

Ratatouille V2.0

I had a ton of veggies in the house last night so I decided to make Ratatouille; with a twist! This one kinda has a lasagna feel.


Ingredients:

  • 2 Tbsp EVOO
  • 1 medium eggplant; cut 1/2" thick
  • 1 large zucchini; cut thin w/ mandolin
  • 1 medium onion; cut thin w/ mandolin
  • 3/4c shredded mozzarella
  • tomato sauce*
  • 2 yellow bell peppers; thinly sliced
  • 1 box unthawed spinach; or fresh
  • 3/4c shredded mozzarella
  • 1/4c fresh basil; cut
  • 1/2tsp pepper; or more

*For tomato sauce, combine 14oz can of diced Italian tomatoes, 6oz can tomato paste, 1c water, and 1-2 cloves garlic (minced)

Preheat oven to 450 degrees.

Coat bottom of an 11" x 15" glass baking dish with EVOO. Next, layer the ingredients as listed above. Bake for 30min or more if you like a dark crust.

Serves 6-8

August Book Review

Book: The Why Are You Here Cafe (or The Why Cafe)
Author: John Strelecky
Rating: 4.5 stars


This book is a very easy read that only takes an afternoon of your time. Set in a realistic atmosphere with vivid images, the characters are easily relatable. The questions posed in this book really make you think about how you're living life and why you are where you are. For some reason the paperback version is called "The Why Are You Here Cafe" while the hardcover is called "The Why Cafe".
If you feel stuck in your life, stop by your local book store and pick up this little jewel. It's only $8 for the paperback!

My Personal Blog

For those of you that know me, I have a business blog and a personal blog. I've decided to call my personal blog "My Sacred Accord". Everyone has a sacred contract that they come into this world with.

This blog will cover sections from mine including mind, body, and spirit. I'll be posting book reviews, healthy recipes, meditations, and a lot of other things that I've learned.
